Here's what you'll need:
- 4 chicken breasts
- 1 can of Rotel
- 1 can of black beans (rinsed and drained)
- 1 can of corn (rinsed)
- 1 block of cream cheese
- 1 block of Velveeta (optional)
- Place all ingredients (except Velveeta) in a crock pot on low for eight hours or on high for four hours. Stir occasionally.
- Cube and add the Velveeta 30 minutes to an hour before you want to serve.
Enjoy over chips or alone!
